My Bad
Brewed wrong. Finished right.
We got the bittering hops wrong. Rather than tip the batch, we read up and planned a way round it: batter the extra bitterness with as much hop flavour and aroma as we could get in. Citra, Mosaic and Simcoe did the battering.
When it was ready we gave a sample to our regulars. They named it My Bad.
There’s still an edge to it. We’ve stopped trying to take it out.
